About Gruyère | Malta
Gruyère is very popular in Malta indeed. It’s hard yellow interior, makes it excellent to accompany certain dishes. The cheese was named after the town of Gruyères in Switzerland and originated in the vicinity of Fribourg, Vaud and Neuchâtel.
Different Types of Gruyère
Gruyère has many different varieties. The varieties are aged differently and a fully organic version of the cheese is also available. There is also a special variety of Gruyère that is produced only in summer and it is done on the Swiss Alps. It is called the “Le Gruyère Switzerland Alpage.”
You can distinguish between the different maturities of Gruyère, by categorizing them into 2 parts :
- As Part of a Delicious Sandwich:
- As Part of a Starter Plate

How Gruyère’s Made
Raw milk is heated to 34 Degrees Celsius in a copper container. It is then curdled by the addition of a chemical called rennet. The curd is cut up into very small pieces and is then stirred. This stirring releases the whey. This curd is now heated to 43 Degrees Celsius and the temperature is made to reach 54 Degrees Celsius quickly. The whey is then removed and the curds are placed into cheese molds and then pressed to the producers desired shape. After salting the cheese in brine for a while, bacteria is rubbed all over it and the cheese is ripened for about 2 months, in a room with constant temperature. The cheese is also ripened on wooden boards and are flipped over every so often to make sure that the product is moistened evenly. Gruyère can be cured for 3 months and the longer the curing process takes, the more potent the final flavor will be.

Since it is potent in taste, this cheese can accompany other ingredients and blend in to produce a mouth-watering result.
