Gluten free pasta is pasta normally made from rice or corn flour

Individuals with gluten intolerance and Celiac Disease who are used to the Mediterranean diet, and particularly the Maltese one, are likely rejoicing at gluten-free pasta becoming a common supermarket item (even found in some grocery stores). Everyone’s favorite staple grain can be freely enjoyed again, and best of all, companies are improving the texture all the time in an attempt to match it to traditional wheat pasta.

But what is gluten free food? Gluten free food is food that does not contain any gluten, which is found in most grains such as wheat, semolina, barley, etc. Since a large chunk of our food contains wheat and other grains (usually in the form of flour), going gluten free used to be very difficult, but is becoming increasingly easier as more and more supermarkets offer gluten free ranges. Gluten free pasta can be found in many beloved varieties, such as gluten free spaghetti, gluten free penne, gluten free fusilli and many more. The pasta is made from rice and/or corn flour, so it is usually slightly yellower in color and is best eaten al dente. When you are cooking gluten-free pasta, take care not to overcook, as it becomes a gummy mess and does not hold up its shape as well as wheat-based pasta does! You cook gluten free pasta in the same way as regular pasta; by placing in a pot with hot water and boiling for the length of time indicated on the packet (average time: 10 minutes), and when cooked right has a very similar taste and texture to wheat pasta.

Having a packet of gluten free pasta in your cupboards is a perfect back up incase you get a guest or relative with a gluten intolerance and need to whip up a very quick meal, and is nearly fool proof! Any sauces you want to add can be made as normal and added to the ready pasta.

If you are an avid cook and would like to try your hand at making gluten free pasta, you will find the ingredients necessary at a reputable supermarket. Whilst most gluten free pasta recipes require the addition of guar gum or xantham gum to help give the dough its elastic qualities, many gluten free bakers and cooks have found simpler alternatives that work just as well, or even better.

For the flour required you may find specially labeled ‘gluten free’ all purpose flour, which is a mixture of  grain substitutes that has been ready made into an ideal flour to use, as well as ‘gluten free self rising flour’, which contains the additional ingredients required to make a dough suitable for making cakes. If you are unable to locate ready made flour, or prefer to test out difference variations yourself, creating a flour from grain substitutes is as easy as running them through a food processor until they reach the right level of fineness.
